Jay’s Away So We’ll Play

Jay’s away this fortnight and I wasn’t going to do a meal plan, but groceries need to be done and it gives me a good idea of what to cook on some of those super long days. As you probably know from this post, we don’t need to buy too much fresh produce these summer days, but I will be picking up a few things to supplement our garden.

I was given  this gorgeous book, and how happy I am to have added to it my cookbook collection. The stunning hand drawn illustrations or ingredients throughout the book make me smile. I thought this recipe would be a great one for Elliot and I. I can make up a batch and eat for lunch or dinner the next day.

Another from the beautiful Eat This My Friend. I love the idea of fritters at this time of year. So much delicious fresh produce, I’ll use what ever vegetables we have in the crisper and some homemade ricotta to whip these up. Then I can add some leftover fritters to Elliot’s Occasional Care Lunch Box.

As you can see I’m going snack foods/lunch foods for dinner. I’m after quick, easy, full of summer veggies and can add salad to. These spiced hand pies will make the perfect lunch, snack, dinner.


Jay’s away and as you may know, he’s the pizza maker in our house. But some time ago I was sent some delicious Mission products one of which was a pizza base and this feels like the perfect time to get it out.

You might be thinking ‘alright, already, we get it, enough with the fritters.’ And I say, ‘no’. Fritters are the perfect way to use up all these excellent veggies and prefect for the following day too.


A delicious patty, a fresh bread roll, locally grown salads, homemade tomato sauce, there’s nothing much better.

Heidi’s blog and Instagram are amongst my favourites, ones that I always take the time to sit down and read. That may be due to my dream of one day being a dietician, or maybe even our similarly aged children and like mindedness in raising them, but mostly to do with her beautiful way with words and gorgeous photography.
