Meal Plan #6

I’m away for the first week of this meal plan. I’m headed up to New South Wales to attend the gorgeous Sophie from Local is Lovely’s photography and styling workshop. The boys are going to have a ball at home together, just the two of them for those days. So there’s a few things that can get chopped and changed throughout the fortnight.

Risotto

This will be a mishmash dinner and will be my easy risotto base with which ever veggies, probably broad beans, we have lying around added to it.

Buddah Bowl

I love a buddha bowl for dinner. It’s the perfect way to use up some of the excess that you have in the pantry. I love using Sarah Wilson’s guideline from Simplicious*. 3 serves of veggies, 1 serve of protein, 1 tbsp of fat (avo, cheese etc), 2 tbsp of ferments. Sometimes I’ll also add a grain, barley, brown rice etc.

Broad Bean Pasta

Our broad bean plants are weighed down so much at the moment, they are covered in perfect pods. Jay makes this amazing pasta with butter, parmesan and broad beans. Delicious!

Open Veggie Burgers

Instead of putting them in a bun, I thought we’d just have the patio was a plate of delicious salads, pickles and ferments.

Cheapest Stew Ever – Simplicious*

I’ll make this stew up in the slow cooker and serve it with a big stack of lightly steamed greens.

‘Pizza’ Bread and Butter Crumble – Simplicious*

One of the things that I love about Simplicious so much is that you’re actually given recipes to use up the leftovers and this is one of those. The leftovers from the cheapest stew ever will get turned into this ‘pie’.

Leek and Potato Frittata – A Year In My Real Food Kitchen*

I love Emma’s book. It’s all vegetarian, gluten free and divided into seasons. So if you are interested to learn more about eating seasonally, then this is a great place to start. I’ll probably add which ever veggies are left in the crisper.

Slow Cooked Barbecue Pork on Baked Potatoes – I quit Sugar For Life*

I first had this pork at a friends house, and then had to go out and buy this cook book for myself. We’ve eaten it since, cooked it for friends and this fortnight it’ll probably end up being served with 3 of our meals. On baked potato and on the okonomiyaki.

Okonomiyaki In A Tray – Simplicious*

I love this Japanese style pancake and until this version had always steered away from trying it myself. This is super delicious.
