8 Meals from My Pantry

This fortnight is a weird one. We’re away for most of the two weekends, and we’re cooking for friends on the two Wednesdays. So I thought instead of doing a big grocery shop, I’d just grab some bits for those meals when we’re cooking for friends and for the rest we’d just try and use what’s in the pantry.

  • My Minestrone Soup – Big pot of stock, 2 swede, 1 zucchini, 1 carrot, pumpkin, 1/2 of cabbage, risoni, parmesan
  • Risotto – frozen peas, corn, corned beef, powdered beef stock, parmesan cheese
  • Quiche – frozen puff pastry, eggs, corned beef, capsicum
  • Pasta Puttanesca – fresh tomatoes, capers, olives, anchovies, oregano and thyme from the garden
  • Brinner – Eggs on sourdough toast with sauerkraut
  • Pizza – flour, yeast, pasata, olives, anchovies, olives, roast capsicum, zucchini, chorizo
  • Baked potatoes – potatoes, broccoli, cabbage, mayonnaise, kransky, cheese
  • Veggie mince on rice – tinned lentils, past, tinned tomatoes, egg plant, coriander, beans, rice

Do you ever have weeks where you refuse to go grocery shopping and just shop your pantry instead?

  1. I definitely think that there is enough in our kitchen cupboards/fridge to keep us going for the week – it’s just the luxuries that sucker me into actually going shopping. I love the idea of this post and would like to do something similar on my blog {if you didn’t mind}.

  2. I have a pretty well stocked pantry/fridge/freezer too and try weeks where I buy very little reasonably often. I tried one of those ‘eat down the fridge/pantry’ challenges once where you can’t buy anything, and was a bit embarrassed that even after a week you could hardly tell we’d used anything…I guess I’m set if we have a zombie apocalypse 🙂
