I have this wonderful group on Facebook for anyone who has purchased a sourdough starter and ebook kit, or attended a sourdough workshop in Geelong at Little Green Corner. In this group people share their successes, their failures, ask questions, and share recipes that have worked wonderfully.

One recipe that I recently loved the idea of was a sourdough pancake recipe. So I mixed up the batter, and let it rest, and then decided to make waffles instead. So you can do either with this recipe.

Sourdough Waffles

  • 2 1/2 cups SR Flour
  • 2 tbsp brown sugar
  • Pinch of salt
  • 1 1/2 cups warm milk
  • 120g butter melted
  • 2 eggs room temp
  • 1/3 cup of bubbly sourdough starter
  1. Whisk together melted butter, warm milk, eggs, sourdough starter and brown sugar.
  2. Add flour and salt and stir until well combined.
  3. Let sit for minimum of one hour.
  4. Cook in pan or waffle iron until browned and cooked through.

  1. Hi Clare, thanks for the recipe, what a great idea. I make sourdough crumpets using excess sourdough starter, they are just lovely. They have a sour note about them which is counter balanced by the maple syrup or honey that soaks into the fluffy light crumpets.

    I purchased a starter from you in June and have just gotten around to bringing it back to life. I just wanted to say that by following your ratios, I’ve been able to turn out loaf after loaf of perfect Sourdough! It’s been a dream of mine for a long time to move away from yeast and processed foods and this has been such a breeze. So thank you so much for sharing your knowledge!
