Toast Dinner and the new Spotlight IMKcolour range

Some days are toast-for-dinner days. Some days are toast-for-breakfast-lunch-AND-dinner days. Today has been one of those days. Days when Elliot is obviously getting a cold and wakes crying and grizzling and doesn’t stop until he settles into bed at night. These days I’m glad that we have a beautiful toaster that I can stand in the corner and watch while I zone out waiting for our sourdough to brown.

The new stylish IMKcolour range from Spotlight include toasters, kettles, stick blender and blender, are affordable and designed to be used every day. And you can be sure that we will use it every day. Fresh sourdough bread, toasted, slathered in butter and local honey is a perfect second breakfast. But for dinner I wanted to go the extra mile.

Starting with savoury, I made a simple entree course of avocado, a squeeze of lemon juice and a grind of salt and pepper.

Then rubbing the hot toast with a halved garlic clove, the aroma filled the kitchen. I topped it with boccocini, halved cherry tomatoes and pungent basil leaves, a drizzle of local olive oil and a grind of pepper and salt finished it off perfectly.

As a bridging course, joining the sweet and savoury, I topped salty feta with quartered madjool dates and toasted slivered almonds.

Continuing the sweet/savoury combination was crunchy peanut butter, fine slices of banana and a drizzle of sweet, sticky local honey.

Slow roasted pumpkin, mashed with a teaspoon of cinnamon, spread over the hot toast, topped with toasted walnuts and maple syrup, a nod to the northern hemisphere.

And finally, last but definitely not least, ricotta, finely sliced corella pear, drizzled with local golden honey and finished off with a crack of black pepper.

Some seriously delicious combinations! And I was ever so thankful for our new toaster, it’ll get a workout in our house. You should definitely head over and check out Spotlight’s new range, they will bring some colour to your kitchen.
