Peanut Butter and Choc Chip Cookies

peanut butter and choc chip cookiesThe last couple of weeks have been crazy busy.  We’ve had concreters, plumbers, electricians, carpenters and deliveries on our building site.

choc chip and peanut biscuitsIt’s in my best interest to keep all our trades happy, so for ‘smoko’ each morning I’ve been taking Arnott’s Assorted Cream Biscuits, because I’ve had neither the time nor inclination to bake, out with coffee.

peanut and chocolate chip cookiesBut one morning when I was unable to go back to sleep after J’s ridiculously early alarm went off; I got up, poured myself a cuppa, enjoyed the silence and found some Pin-spiration.

Peanut Butter and Choc Chip Cookies

Serves: 27
Ingredients
  • 1/2 cup chopped butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup crushed dry roasted peanuts
  • 1/2 cup peanut butter
  • 1/3 cup choc chips
  • 1 1/2 cups of plain flour
  • 1/2 tsp bi-carb soda
Instructions
  1. Pre-heat oven to 200*C
  2. Cream butter and sugar
  3. Add egg and vanilla, mix until well combined
  4. Add peanuts, peanut butter and choc chips, mix well.
  5. Fold in flour and bi-carb until just combined
  6. Refrigerate for 30 mins.
  7. Roll tablespoons of the biscuit dough into balls and place on baking tray about 2 cm apart.
  8. Bake 10-15 mins
  9. Cool on tray for 5 minutes, then move to cooling rack.

  1. That’s so good of you to look after the tradies. I know they sure would appreciate it. I bet they loved these cookies. Like you say, there’s no happier marriage than peanut butter and chocolate. Your cookies look chewy and delicious xx

    1. They really are a great cookie. And we’ve had good luck with the tradies so far, so I’m just going to keep on baking.
