Mini Breakfast Quiche

Mini Breakfast QuicheJ’s alarm used to go off at 4:40am.  This isn’t great for any of the parties involved.  I mean, not great for J, he’s the one getting up at 4:40am, and not great for me because I usually wake around mid-night to feed E, and then again any time between 4 and 5.  This means that I either get woken by J before I need to wake up for E’s feed, or a stay away waiting for his alarm to go off.

egg and bacon muffinsYou might ask, “why the hell does any one get up that early to go to work?”, and if you are, well don’t worry, I often ask the same thing.  You see, he hates traffic and when you drive an hour and 10 minutes on a good run to get to work, you avoid peak hour in any way you can.  So for him, this means getting up super early, arriving at work pretty early, but then getting to leave early-ish, missing the evening peak hour and arriving home with enough time to go for a ride, a paddle or just hang out with his beautiful family.

egg and bacon quicheSo I wanted to delay that alarm a little, and see if we couldn’t make it just a little bit later.  So I started making him these breakfast muffins.  I’d make some savoury and something healthy and sweet-ish, he grabs them out of the freezer at night, and puts them in his work bag, then he eats them in the car on the way to work.  It’s way better for him than the piece of toast he used to make and way quicker too, we all win!

Now his alarm goes off at 4:50am.

Mini Breakfast Quiche

Serves: 12
Ingredients
  • 8 eggs
  • 2 spring onion
  • 4 rashers of bacon
  • 2 tomatoes
  • 1 cup grated cheese
  • 1 cup self raising flour
  • salt and pepper
Instructions
  1. Crack the eggs into a large mixing bowl.
  2. Wisk.
  3. Chop bacon, tomato, spring onion into small bite sized pieces, add to eggs and stir.
  4. Mix in salt and pepper, flour and cheese.
  5. Spoon evenly into 12 muffin trays.
  6. Bake 20 mins on 180*C

  1. Well, this morning our neighbour let their dog out at 4am and the little yapper woke us up, and we don’t have a commute!! And they sent us to bed last night with a raucous, noisy and very loud party. Nice neighbours. I usually get up about 5.15 or 5.30 by choice as I’ve always been a morning person. When we lived on the farm and got up at 4am, though, even I found that difficult. The muffins sounds delicious, great idea and I’m sure your husband appreciates it.

  2. Thanks for the recipe, these sound quick, easy and delicious! My husband’s alarm goes off at 6 and mine at 6:30. We then usually sit in bed and have our muesli together while watching the Today show. Aahh it’s the little things.

  3. Even though his alarm goes off at 4.50am now, that’s still bloody early! I don’t know how I’d cope! I’m usually not in bed before 11pm so I can’t cope with early starts. I love the look of your breakfast quiche and these are so much better than a slice of toast xx
