We’re so lucky to have an amazing blueberry farm close by, in fact it’s called Tuckerberry Hill Blueberry Farm, but they also have strawberries, a cute cafe and the produce market where we buy our fruit and vegetables each week.
It always gets to this time of winter and I start craving summer fruits and the summer weather, so I thank my past self for freezing or preserving summer flavours. Last summer I froze a heap of blueberries, the last of which I used in this cake (and then I had to borrow a few more from my mum).
The blueberries burst like a ray of sunshine in your mouth and the coconut flakes give this dense, moist cake a tropical feel.

Coconut, Lemon and Blueberry Cake

Ingredients
- 1/3 cup coconut oil
- 1 cup brown sugar
- 1/4 cup lemon juice
- 2 eggs
- 1 cup wholemeal self raising flour
- 1/2 cup coconut flour
- 1 cup milk
- 1 tbspn lemon zest
- 1/2 cup coconut flakes
- 1 cup blueberries (frozen or fresh)
- 1 tbspn wholemeal self raising flour
Instructions
- Preheat oven to 180*C
- Coat blueberries in the 1 tbspn of wholemeal self raising flour, set aside.
- Cream coconut oil and sugar together.
- Add eggs, lemon juice and lemon zest, mix until well combined.
- Combine flours.
- Add half flours and half milk to egg mix, mix well, add remaining flour, milk, coconut flakes and lemon zest, mix well.
- Add blueberries and the tbspn of flour, mix gently until well incorporated.
- Pour into lined loaf tin, and bake for 1 hour and 30 mins.
- Allow to cool in tin for 10 mins, then cool on cake rack.

Oh Clare this looks mouthwatering. I wish I had a blueberry farm nearby. They’re so expensive around here and I’m sure they’re not local.

Yummo. This year my goal is to preserve more of summer. At the moment I am craving stonefruit. I could kill a peach right now. A blueberry farm sounds like the best place to buy your produce on the weekend too, nice.
