Blueberry, lemon and coconut cakeWe’re so lucky to have an amazing blueberry farm close by, in fact it’s called Tuckerberry Hill Blueberry Farm, but they also have strawberries, a cute cafe and the produce market where we buy our fruit and vegetables each week. lemon, blueberry and coconut cakeIt always gets to this time of winter and I start craving summer fruits and the summer weather, so I thank my past self for freezing or preserving summer flavours. Last summer I froze a heap of blueberries, the last of which I used in this cake (and then I had to borrow a few more from my mum).

The blueberries burst like a ray of sunshine in your mouth and the coconut flakes give this dense, moist cake a tropical feel.

Coconut, Lemon and Blueberry Cake

  • 1/3 cup coconut oil
  • 1 cup brown sugar
  • 1/4 cup lemon juice
  • 2 eggs
  • 1 cup wholemeal self raising flour
  • 1/2 cup coconut flour
  • 1 cup milk
  • 1 tbspn lemon zest
  • 1/2 cup coconut flakes
  • 1 cup blueberries (frozen or fresh)
  • 1 tbspn wholemeal self raising flour
  1. Preheat oven to 180*C
  2. Coat blueberries in the 1 tbspn of wholemeal self raising flour, set aside.
  3. Cream coconut oil and sugar together.
  4. Add eggs, lemon juice and lemon zest, mix until well combined.
  5. Combine flours.
  6. Add half flours and half milk to egg mix, mix well, add remaining flour, milk, coconut flakes and lemon zest, mix well.
  7. Add blueberries and the tbspn of flour, mix gently until well incorporated.
  8. Pour into lined loaf tin, and bake for 1 hour and 30 mins.
  9. Allow to cool in tin for 10 mins, then cool on cake rack.

  1. Yummo. This year my goal is to preserve more of summer. At the moment I am craving stonefruit. I could kill a peach right now. A blueberry farm sounds like the best place to buy your produce on the weekend too, nice.
