Pumpkin Cupcakes and an unintentional week off

Pumpkin CupcakesI’m usually one of those annoying positive types.  I try to find positives in everything, and because of that (the law of attraction thing), I believe my life is surrounded by mostly postive things.

However, this last 7 days was different, it was as though everything I touched turned to coal, everywhere I looked something went wrong, I was tripping over my own feet and I blame the baby (I can do that right?).Pumpkin Cupcake thelifeofclare

  • I crashed my car.  I’ve never even hit a pole, never had to call on my insurance and this time I wrote it off.  Pushed the accelerator instead of the break and drove right into the side of someone.  Thank all the gods, that everyone was ok!
  • I borrowed my dads car, after crashing my own, and flattened his car battery.  My lights always turned off automatically, his don’t.
  • I burnt my pumpkin pie crust to an inch of it’s life.
  • I was defrosting a loaf of sourdough on the stove, on top of a gas element I had forgotten to turn off.  Needless to say the bread didn’t fare to well.
  • I answered the phone when my grandma called and stood up to walk out of the room, tripped over a computer cord and landed flat on my face.  I dropped the phone, J picked it up and started talking to her, while I was crying in the background, meanwhile poor Grandma had no idea what was going on.
  • I did some bad coding in the template of my blog and thought a great solution would be just to delete the template and reload it.  The template doesn’t exist any more.  So the hours and hours I’d spent making my little online space looking exactly as I’d wanted, all went down the drain (although I’m pretty happy with the outcome).

So as you can imagine, this recipe wasn’t the one I had been planning.  I had already boiled the pumpkin for the pumpkin pie, so it needed to be used.pumpkin cupcake

I’m just thankful that this week we are away, celebrating my birthday in Far North Queensland, I feel like I needed to hit the refresh button!

Pumpkin Cupcakes

  • Cupcakes
  • 2 cups (-4tbspn) of plain flour
  • 4 tbspn corn flour
  • 2 tsp baking powder
  • 1 tsp bi-carb soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 1/4 cups boiled puree pumpkin
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 113 gm butter
  • 1 cup firmly packed brown sugar
  • 1/3 cup white sugar
  • Icing
  • 2 x 250 gm packets of cream cheese
  • 2 cups of icing sugar
  • 113 gm of butter
  • 1 tsp of cinnamon
  1. Preheat oven to 180 degrees Celsius.
  2. Sift flour, corn flour, baking powder, bi-carb soda, spices in a medium bowl.
  3. In another bowl, mix pumpkin, milk and vanilla until smooth.
  4. Cream butter, sugars until fluffy and add one egg at a time, until combined.
  5. Add pumpkin mixture and flour mixture, alternating between the two.
  6. Fill cupcake liners until 3./4 full.
  7. Bake for 20-25 minutes or until a cake tester comes out completely clean.
  8. Cool before icing.
  1. Mix all ingredients together in mix-master until smooth.
  2. Pipe onto cupcakes.

  1. That doesn’t sound like a good week at all. What a shame about your car but what a relief everyone was okay. I used to do strange things when I was pregnant – you seem to become a bit vague or lose your spatial awareness or have too much on your mind or something. I love the look of your blog even without the template! xx

    1. Thanks Charlie, there’s still a few bits and pieces I need to finish up on the blog but I’m pretty happy with it for the moment 🙂 I always swore that I wouldn’t get ‘baby brain’ but I suppose these things just happen to the best of us.

  2. Haha I hate to break it to you but a lot of those things you can blame on the baby. I’ve done some pretty odd things too! I went to Bunnings the other day and came out and got in the passenger side instead of the driver’s side.
    Got in the car after yoga the other night and put my sunglasses on then wondered why it was so dark.
    Went on a picnic with friends and packed tea cups and water glasses but left the thermos and water bottle at home.
    Who knows what we’ll be like when the babies actually arrive!

    1. Yeah a friend told me the other day that it just gets worse after the baby is born… So at least there’s that to look forward to 🙂 It was a great week away and I had a lovely birthday.

  3. You can definitely blame the baby – I thnk that baby brain is a scientifically proven fact 😛
    It does sound like a tough week and I am glad that you are getting to have a break this week – enjoy your birthday and the sunshine.
