When we were in Nepal we visited OR2K quite a few times. OR2K is a popuar Isreli run restaurant, the Middle Eastern fare was well cooked and moderately priced and perfect for those looking for a little Western culture, conversation and free wifi. We spent a fair bit of time there in the last few days of our trip, when the smell of the Kathmandu streets was too much for my sensitive pregnant senses, wasting time on the Internet and drinking this amazing mint lemonade.
I posted the below picture on Instagram, and had a couple of people interested in a recipe.
Yesterday J took it on himself to recreate it and it’s a fabulous as I remember. Obviously slightly different, maybe next time we could add more mint, but it’s the perfect summer mojito mocktail. I also love that’s it’s using ingredients that we can pick straight from our backyard.
- 2 cups sugar
- 6 cups water
- 2 cups fresh lime/lemon juice
- 1/2 cup mint leaves
- crushed ice to serve
- Juice limes.
- Make sugar syrup with water and sugar.
- Pour lime juice, sugar syrup, and mint into blender.
- Blend until mint is at desired size, add ice.
Yum! Sounds deliciously refreshing indeed! x
