At J’s Request.

Every morning in bed I read blogs and J reads The Age, both on our iPads.

It feels like the modern version of the Saturday morning news paper reading.  I update him on my friends posts, and the ‘important’ bits of the news (from twitter) and he updates me on interesting info he finds in the paper.

Now there’s something that must be known about J, he doesn’t drink very much, has no drug addictions but if you put a bag of peanut M&M’s in front of him, he will not hesitate to eat the whole thing, no matter what size and no matter how sick he know’s he’ll feel at the end of his binge.

So when he stumbled across a Chocolate, Peanut Butter and Cheesecake brownie recipe in the newspaper one morning, he of course asked me to make it.  Now I rarely receive baking requests from him, he’s not a real sweet tooth (apart from the peanut M&M’s), so I couldn’t say no.

And as the 8th of December is National Brownie Day I thought of nothing better than this to share with you.

This brownie is delicious!  Absolutely one of a kind, mouth watering, melts in your mouth delicious and unless you can’t eat sugar/gluten/peanuts etc, then you absolutely have to give it a go!

Chocolate, Peanut Butter and Cheesecake Brownie

  • Brownie layer
  • 200g dark cooking chocolate, broken into pieces
  • 125g butter
  • 115g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 60 g plain flour
  • pinch of salt
  • Cheesecake layer
  • 250g block of cream cheese
  • 1/3 cup smooth peanut butter
  • 1 tsp vanilla extract
  • 115g caster sugar
  • 2 eggs
  • 2 tablespoons of milk
  • 2 tablespoons of plain flour
  • 60g dark cooking chocolate
  1. Preheat oven to 180 degrees, line 20cm x 20cm tin
Brownie layer
  1. Stir chocolate and butter in a medium saucepan until melted, set aside to cool for 10 mins.
  2. Using electric mixer, beat sugar, eggs and vanilla until pale and fluffy, about 3 minutes. Slowly add chocolate mixture while mixing on low speed. Then beat in flour and salt. Spread brownie mix in pan.
Cheesecake layer
  1. Using electric mixer beat cream cheese, peanut butter and vanilla until smooth.
  2. Gradually add sugar and beat until light and fluffy.
  3. Add eggs one at a time and beat until fully incorporated.
  4. Next beat in milk and the flour being careful not to over mix.
  5. Spread 2/3 of cheesecake mixture on top of brownie mixture.
  6. In a small microwave bowl, break up cooking chocolate and melt at 10 second intervals, stirring in between until melted.
  7. Once melted stir into remaining mixture and gently place on top of brownie in pan. Use chopstick to create swirling patterns.
  8. Bake for 35 mins. Should be slightly undercooked with gooey centre.

    1. Maybe it’s a man thing, less sweet toothed? But these brownies were so good, that I think you could convince him that he needed some.

    1. It was super peanut-buttery and I also used natural peanut butter so there wasn’t all the additive. It was mostly moist, dense chocolate with a hint of peanut cheesecake.

I’m filling him in on all my blog friends that he ‘knows’ and he fills me in on world events. Such a perfect combination! And funny enough on Sunday Patrick forwarded me new salad recipes he found!

    1. Isn’t it awesome. J forwarded me the links and I made them, there was also a lemon ricotta biscuit that I might have to give a go.

    1. They were delicious, I had to give a lot away otherwise we would have sat and eaten the whole things ourselves.

  2. Love love love this! My friends go gaga when I make them anything with the peanut butter and chocolate combo but unfortunately my husband isn’t a fan of sweets. Oh, and both our men are “J’s”! 🙂

    1. Even the chocolate/peanut butter combo? Tell him that he must try them, and then if he doesn’t like them, you can just eat the rest.

    1. It was absolutely delicious. I will have to make some more in the new year! It’s a good way to keep up with all the great food isn’t it. I also find that I’m as up to date with the news as he is, through twitter.

  5. Those brownies look so good! I do love a good brownie, and they look fantastic! And my husband and I are the same, although he plays angry birds while I catch up on blogs or read a book on my iPad.

    1. I never got into angry birds, maybe I’ll have to get J onto it! The brownies were absolutely delicious.

  6. Claire this brownie is visual and physical torture because i am a brownie addict and cannot eat this through my computer screen. I certainly know what dessert i will be stuffing my face with for Christmas! I’ll be leaving out the cheesecake layer though cause i am lactose intolerant. Do you have any idea of a good substitute?

  7. I agree with you, that brownie is really mouthwatering. It looks yummy and I love each layer because it is chewy and the sweetness is just right. This recipe is something that you can definitely be proud of and worth to be kept forever.
